Students could make their own blog page to create a journal on what they learn in your course or you could post a warm-up question of the day for them to answer.

A warm-up question a great idea. Or even an exit questions. Or they could post responses at home! :)

Students could discuss their progress on the Learn and Serve project with Barnes' class.
JKGabler - I hope you are not an English teacher
Have students develop opinions and generate discussions.
